[December to February | Restaurant Ruan] Introduction of the winter menu.

Thank you very much for your continued support.

At LE UN Sasayama Castle Town Hotel Nipponia, we have prepared a special course that reconstructs the blessings of food nurtured in winter in Tamba Sasayama,
using French culinary techniques.

The severe cold of this region has brought out the sweetness of vegetables and deeply nurtured a rich food culture.
"Dried daikon" that stores energy under the snow, and "sake lees" for surviving the winter.
Thinking of the wisdom of our ancestors and the stories of the satoyama rooted in this land,
each dish is carefully crafted.

Please enjoy a rich and profound moment that can only be encountered in this place, along with its historical atmosphere.

Menu introduction

Introducing a dish crafted with care by the chef, woven from tradition and technique.

Baked apple with sake lees and raisins.

A dessert featuring baked apples that have been slowly roasted to concentrate their sweetness, complemented by the rich aroma of "sake lees," a wisdom of our ancestors that helps them survive the winter.
With the dense acidity of dried grapes, it transforms the deliciousness nurtured by the winter of the Satoyama into a new form of French cuisine.
This is a warm dish that allows you to feel the deep culture of Tanba Sasayama, cultivated in the harsh cold.
