Rich ingredients from Fukuoka include seafood caught in the bountiful fishing grounds of the Genkai-nada, nourished by the nutrient-rich Kuroshio Current, high-quality Hakata Wagyu beef raised on locally sourced feed, and the premium Amaou strawberries.

Itoshima, located next to Fukuoka City, is rich in nature with mountains and the sea. The "Itoshima pork," carefully raised in clean and well-ventilated pigsties, is attractive for its tender meat quality and the sweetness and umami of its fat.

is named after the initials of its characteristics: red, round, large, and delicious. True to its name, it has a large and round appearance, and its excellent balance of sweetness and acidity makes it a popular strawberry nationwide.

Inheriting French techniques that appeal to all five senses, not just the eyes and tongue, I have been appointed as the chef at the Kobe Geihinkan Nishio Residence of VMG HOTELS & UNIQUE VENUES since 2007.
In the future, I will oversee the opening of AKAGANE RESORT KYOTO HIGASHIYAMA1925 and the kitchen departments of various restaurants and facilities, and I will be appointed as the Grand Chef in 2024.

Timeless feast
The restaurant is located in Kokan-an, a building designated as an important cultural property in Dazaifu City. Kokan-an is situated near the Tenmangu Shrine and was once a ryotei cherished by the people of Dazaifu. The dining area, renovated from the original tatami rooms, retains the charm of the era, allowing you to savor the local gourmet cuisine unique to this area.
You can view the garden, which has been preserved since the Edo period, through the Taisho glass of the engawa and the snow-viewing shoji. At night, the garden is illuminated, creating a space that is different from during the day.

Arita ware, Kinzengama
Arita ware, the first porcelain in Japan, was made in 1616 from white clay in Arita Town, Saga Prefecture. Kinzengama, which aims to inherit the breath and skills of many artisans and pursue a new era of Arita ware, is characterized by its chic and modern designs.
