Introducing a dish that captures the gentle aftertaste of spring.

Caramel mousse with strawberries from Kyushu and 'Mataichi no Shio' salt.

A spring-like dish where the juicy sweetness and sourness of Kyushu strawberries is gently enveloped by a caramel mousse made with 'Mataichi salt', which is carefully cooked using seawater from Itoshima.
The salt, born from meticulous craftsmanship in the land of Itoshima where the minerals of the sea and mountains blend, adds depth and a pleasant accent to the flavor.
