Fukuoka Soy Sauce Shop, which has a soy sauce brewery that is a Registered Tangible Cultural Property located in Iga City, Mie Prefecture, is a long-established brewery that has been making soy sauce since the Meiji era.
The "Hasamezu Soy Sauce Koiiro," characterized by its fragrant and deep flavor, is also certified as IGAMONO.

In this activity, you can tour the soy sauce brewery, which is usually not open to the public, and experience up close the craftsmanship and depth of history through the cedar barrels that have been used for over 100 years, the moromi that is currently fermenting,
the koji room, and the rare pressing machines.

Additionally, you can make your own "My Ponzu" using the brewery's pride, "Hasamezu Soy Sauce," and four types of citrus juice.
You can take it home in a special bottle with an original label.

Visit a soy sauce brewery with over 100 years of history

You can see the large cedar barrels that have been used for over 100 years in the rooms where the soybeans are inoculated with koji mold, known as "seigiku," and in the aging rooms.
Each wooden barrel contains different contents, and you can observe those in various states of aging.
You will also get a close look at the "Kirin-style pressing machine," one of the few in the country, and learn about its mechanism.

Experience making my ponzu with our proud "Hasamezu Soy Sauce"

The fragrant, seedling-grown yuzu used in the popular product "Yuzu no Mai,"
You can create your own original ponzu sauce by blending four types of citrus juices—sudachi, lemon, and shikwasa—with "Hasamezu Soy Sauce" to your liking.

The completed ponzu sauce is packed into a special container, and an original label is created. You can take it home as is.
