We offer a Japanese-French course that abundantly uses representative ingredients from Nara, such as Yamato vegetables, Yamato pork, Yamato chicken, and Yamato persimmons. For pairing, we provide a selection of sake directly shipped from Toyozawa Brewery, including limited seasonal sake, as well as wines, champagnes, and shochu personally selected by our sommelier, to enhance the variety of dishes.

Spring
Uda gold burdock
Burdock root, a specialty of the Uda region in Nara, is known for its strong aroma, soft texture, and rich flavor. It reaches its peak season in spring, and the mica attached to its surface sparkles as if dusted with gold powder. Its rich aroma and supple flesh add strength and depth to dishes, and it is often served as a purée or fritter.
Summer
Miwa Somen
Miwa somen, known as a specialty of Sakurai City in Nara, is said to be the oldest somen in Japan, with a history of over 1300 years. Its smooth texture and delicate mouthfeel evoke a sense of coolness, making it a prized ingredient that adds freshness to dishes. Carefully crafted using traditional techniques, Miwa somen is characterized by its elegant and gentle flavor. It is served mixed with a cold eggplant soup as an appetizer.

Autumn
Persimmon
Nara is also famous as a production area for persimmons, and in autumn, sweet and juicy persimmons come into season. Persimmons grown in rich nature are characterized by their intense sweetness and smooth texture, making them an ideal ingredient to evoke the feeling of the season. They are also beautifully colored, adding a touch of autumnal elegance to dishes. We finish with persimmon puree, allowing you to enjoy the natural flavor of the persimmons.
Winter
Strawberry
Nara is known as a strawberry-producing region, with sweet and fragrant strawberries coming into season from winter to spring. Grown in a warm climate and rich natural surroundings, these strawberries are fresh and perfect for appetizers and desserts. They are characterized by their vibrant colors and sweetness that evoke the arrival of spring during the cold season, and they are popular in desserts such as strawberry daifuku and strawberry sauce.

The historical sake brewery has been renovated, preserving the old residence of the brewery owner. The design showcases beautiful beams that support the building as part of the spatial design, and the high ceiling creates a spacious impression. The chef's counter, which seats 12 (+ 4 table seats), features a bold table made from a single piece of cedar from Nara. This unique restaurant allows guests to enjoy a variety of dishes prepared right in front of them while indulging in paired Japanese sake.
