Hachiman, a natural village blessed with the clear streams of the Chikugo River and the Yabe River, is known as the best producer of tamari in Japan. Its clear waters have nurtured high-quality tea leaves and Japanese sake.
Furthermore, the Yame area located in the Chikugo region is rich in seafood from both rivers and the sea.
Of course, the famous local product representing the region, tea leaves, as well as seasonal ingredients unique to this area, such as the river's bounty from Chikugo, will be presented in a new style that incorporates the techniques of local cuisine.

We have prepared a tea pairing supervised by Japanese tea sommelier Mr. Yasuhiro Kiya, tailored to complement the dishes. A cup that captures the multifaceted personality of Yame tea vividly extends the aftertaste of the meal, from during the dining to after.

The morning in Yame Fukushima begins with a quiet ritual of personally preparing a bowl of matcha.
The aroma and bitterness of tea permeate my waking body. It is a luxurious habit known as daily life, repeated for generations in this town.
The breakfast set features a traditional Japanese meal that reflects the culture of the Chikugo region. It includes grilled yamame, benefiting from the clear streams, as well as various side dishes and preserved foods that make use of local mountain and sea delicacies.
Rich and flavorful ingredients gently color the beginning of the day.

Calming the mind, a morning break
Before breakfast, we recommend having morning matcha to feel refreshed upon waking. Matcha is actually easy to prepare, so please enjoy making it yourself. On sunny days, you can also enjoy matcha on the terrace.
The matcha we prepare is made from special tea leaves known as tencha, which have grown into soft new buds rich in flavor, shielded from strong sunlight, and ground into a fine powder.
It is said that theanine, which is rich in relaxing effects, can reduce feelings of fatigue and drowsiness upon waking, allowing for a refreshing morning.
